The answer is very simple. The tea leaves themselves are grown in different ways.
Matcha is made from ‘Tencha’. Tencha is the tea leaves that are covered under a shade in order to prevent from sunshine for more than 20 days before the harvest in order to make the tea leaves much greener in color.
Sencha Powder has More Healthy Benefits Than Matcha Powder!
Covering tea leaves from sunlight makes the leaves greener and more flavorful, but it prevents tea leaves to increase Catechin, which is a very beneficial ingredient for our body.
Sencha has more antioxidants (Catechin / EGCG) than Matcha. Catechin is what is believed to be responsible for green tea health benefits. Sencha green tea leaves get more sun exposure, which increases Catechin in the tea leaves.
